Spicy Peanut Noodles Recipe

Ingredients:

  • ½ cup crunchy peanut butter
  • ¼ cup low-sodium soy sauce
  • ¼ cup rice vinegar
  • 1 Tbsp sesame oil
  • 2 Tbsp sriracha (or to taste)
  • ¼ cup water
  • 1 Tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 Tbsp brown sugar
  • 1 box whole grain linguine (or pasta of choice)
  • 1 cup shredded carrots
  • 2 small cucumbers, shaved into ribbons
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 green onions, sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped peanuts (if not using crunchy PB)
  • 2 Tbsp olive oil
  • 1 (16 oz) block firm tofu, pressed and cubed
  • Salt and pepper, to taste

Materials needed:

  • Stockpot
  • Strainer
  • Cutting board + knife
  • Sauté pan
  • Measuring cups + spoons
  • Mixing bowls
  • Whisk
  • Tongs

Instructions:

  1. Cook the pasta: Boil noodles according to package instructions. Drain, rinse with cold water, and set aside.
  2. Crisp the tofu: Heat olive oil in a sauté pan over medium heat. Add cubed tofu and cook until golden brown on all sides. Season with salt and pepper. Let cool slightly.
  3. Make the sauce: In a small bowl, whisk together peanut butter, soy sauce, vinegar, sesame oil, sriracha, water, ginger, garlic, and brown sugar until smooth.
  4. Prep the veggies: Slice, shave, or chop all vegetables. Don’t hesitate to use pre-cut or bagged options! Pre-chopped veggies = more time to rest and nourish.
  5. Assemble: In a large bowl, combine pasta, tofu, and veggies. Pour the peanut sauce over the top and toss well to coat.
  6. Serve or chill: Enjoy immediately or cover and refrigerate for a few hours to allow flavors to develop.
