It may be someone who is looking to stop the chronic dieting or looking for tips on managing chronic illness symptoms or folks in recovery from eating disorders or disordered eating.

Well, today one of our team members, Taylor, is sharing another delicious recipe for you: Curry Tofu and Roasted Chickpea Rice Bowls.

Now don’t stop reading here because you saw the word tofu. I’ve been cooking with Taylor a lot the past year, and she really knows how to make tofu taste delicious!

This dish is a flavorful and nutritious option for those looking to incorporate more plant-based meals into their diet. The combination of aromatic spices like curry powder, garam masala, turmeric, and coriander creates a rich flavor profile that is both comforting and exciting.

The tofu, crisped to perfection, and the roasted chickpeas, seasoned with a hint of umami, add a satisfying texture and protein boost to the dish.

Served over a bed of rice, grains, or noodles and garnished with colorful vegetables, this bowl is not only visually appealing but also packed with dietary benefits. It’s an excellent source of fiber, vitamins, and minerals, making it a heart-healthy choice.

Curry Tofu And Roasted Chickpea Rice Bowls

Ingredients:

  • 1 – 16 oz can chickpeas
  • 3 tbsp. Olive oil
  • 2 tsp. Garlic powder
  • 2 tsp. Onion powder
  • 2 tsp. Curry powder
  • 2 tsp. Trader Joe’s Mushroom Umami Seasoning (optional)
  • 2 tsp. Garam masala powder
  • 1 tsp. Turmeric powder
  • 1 tsp. Coriander
  • 1 tsp. Smoked paprika
  • 16 oz Tofu
  • 1 tbsp. Cornstarch
  • 1/2 Red or white onion, thinly sliced
  • 1/4 cup Trader Joe’s Yellow Curry Thai Sauce (or any other curry sauce you like/have on hand)
  • A serving of leftover rice/grain/noodle of choice
  • Salt and pepper to taste

Materials:

  • Parchment paper
  • Baking sheet
  • Sauté pan
  • Rice cooker/saucepan (if preparing rice/noodles/grains)
  • Cutting Board
  • Knife
  • Large bowl

Cooking Instructions:

  • Step 1: Drain and press excess moisture from tofu. Preheat oven to 400°F
  • Step 2: Drain and rinse the chickpeas. Lay out in a single layer on a parchment paper-lined baking sheet. Drizzle with 1 tbsp olive oil and coat evenly with half of the spices and salt. Bake for 20 minutes, tossing halfway through baking. Set aside.
  • Step 3: Cube tofu and drizzle with 1 tbsp olive oil and coat with cornstarch and the other half of the spices and salt. Preheat a sauté pan on medium heat with 1 tbsp olive oil.
  • Step 4: Sauté tofu for 7-10 minutes (or until crispy), tossing every few minutes. Add onions and toss with tofu. Cover and cook until onions are translucent.
  • Step 5: Assemble! Fill a bowl with your rice, grain, or noodle of choice. Top with tofu and chickpeas. Add some leftover greens or whatever colorful, crunchie veggies you have on hand.
  • Step 6: Enjoy!
